1. Melt the butter in a large sauté pan over medium heat, add onion and cook until the onions are translucent.
  2. Add garlic for 1 minute, then remove pan and let cool.
  3. Remove excess water from spinach. then combine with stuffing mix, eggs, Parmesan, and onion/garlic mixture.
  4. Roll the mixture into 1 in balls and put on baking sheet.
  5. Bake at 350˚ F for 15 minutes or until browned.
