- 1/2 cup unsalted butter
- 1 small onion, chopped
- 1 clove garlic, minced
- 2 (10 oz) frozen chopped spinach
- 1 (8 oz) bag stuffing mix
- 6 large eggs
- 1 cup grated Parmesan cheese
- Melt the butter in a large sauté pan over medium heat, add onion and cook until the onions are translucent.
- Add garlic for 1 minute, then remove pan and let cool.
- Remove excess water from spinach. then combine with stuffing mix, eggs, Parmesan, and onion/garlic mixture.
- Roll the mixture into 1 in balls and put on baking sheet.
- Bake at 350˚ F for 15 minutes or until browned.
