1. Place potatoes on a baking sheet, drizzle with olive oil, then place in preheated oven at 350˚ F for 15 minutes.
  2. Meanwhile, heat 1 tablespoon of olive oil in a medium pan and cook the broccoli flourets and bacon for 5 minutes. Then mix with ricotta in bowl.
  3. When the potatoes are done, cut a sliver about halfway into the potato and fill with ricotta mixture. Bake for another 5 minutes in oven.
