1. Preheat oven to 300˚ F.
  2. Bring a double boiler to a boil. Combine cream, 1/4 cup sugar and salt in saucepan. Stir until steam rises. In separate bowl, beat egg yolks and vanilla. Pour hot cream into yolks until mixed.
  3. Bake 25 minutes until set. Chill in fridge 6 hours.
  4. Sprinkle 1 tablespoon sugar over each. Use a kitchen torch or oven broiler to brown top.
