- 2 Boneless skinless chicken breasts
- 2 Russet potatoes
- 2 tablespoons rosemary
- 2 tablespoons butter
- 1 Clove garlic minced
- 3 tablespoons pure olive oil
- Cut potatoes into 3/4 inch cubes and spread out on a baking sheet. Drizzle with olive oil & 1 tbsp rosemary.
- Place baking sheet with homefries into pre-heated oven at 425˚ F for 8 minutes of the full 25.
- Mix butter, garlic, and remaining rosemary. Rub the spread all over the chicken breasts and place in oven with potatoes for the remaining 17 minutes or until internal temp is 160˚ F.
